we try to keep a good leaves coverage until the harvest time in order to prevent sunstrokes and an excessive contact with the warm winds coming from the valley. Harvest around mid-September. Light maceration at a low temperature to give more character and more complexity. Low temperature fermentation with indigenous yeasts and, after the winter season’s break in which lies on fermentation yeasts with repeated pumping, is put directly into the bottle where it rests for few months before being put on the market.
yellow-green shades with shiny refl ections announce a rich and full-bodied wine. Honey aromas, butter, fl int, tobacco, tea with fruity notes of apricot, pear, citrus fruits such as lemon and grapefruit, or plants such as thyme, sage, nettles and hawthorn. Structured taste, tasty with a good acidulous and mineral note typical of our sea-origin soils.
